Ingredients:

• 2 medium yellow summer squash
• 2 cups broccoli
• 2 medium red peppers
• Brown rice
• Red salsa
• Fresh pepper
• Fresh cilantro (optional)

Instructions:

• Preheat oven to 425 degrees Fahrenheit.
• Use a silicon mat over a baking tray.
• Slice each veggie into slender necks. Lay the slices on the cooking sheet in a single layer.
• Bake for around 15 minutes. The bottoms of the veggies should begin to brown.
• Sprinkle pepper and turn slices over. Bake until the other sides of the veggies are browned, which will be around 15 minutes.
• Serve! Pair with brown rice and a veggie burger!
