Ingredients
• 1/2 onion, minced
• 1 red bell pepper, chopped
• 1 clove garlic, pressed
• 1/4 tsp ground cinnamon
• 1 15 oz can diced tomatoes
• 1 baked sweet potato, peeled
• 2 tsp rice wine vinegar
• Gluten free rice pasta
• 1 tbs maple syrup
Instructions
• Cook pasta by following instructions.
• On medium heat in a skillet, sauté onion. Add bell pepper and cook until it is tender. This will take around 8 minutes.
• Add the remaining spices, canned tomatoes, vinegar, and sweet potato. Stir and cook on low heat for another 2 minutes.
• Place sauce into a blender and puree it.
• Serve sauce over pasta.
