Ingredients:

• 1 medium onion, chopped
• 6 cups vegetable stock/broth
• 1 can of pureed sweet potato (or 1 medium sized baked potato, peeled)
• 1.5 cups risotto (arborio) rice
• 1 tbs maple syrup
• 3 tbs nutritional yeast

Instructions:

• Saute onion with water until translucent.
• Add remaining ingredients to pot and let is simmer for 25 mins.
• Once the rice has absorbed all of the water, it’s ready!
