Ingredients:
• 1 medium – large baked sweet potato (remove skin)
• 1.5 cup water
• 2 tbs maple syrup
• 8 medjool dates
• 6 tablespoons water
• 2 teaspoons of pumpkin pie spice
• 1/2 teaspoon salt
Instructions:
• Add all ingredients to a blender or food processor and mix well.
• Next, transfer the mix into a medium-sized saucepan and cook on medium to low heat. Simmer the mixture for 8 minutes until it becomes thicker. Keep an eye on the mixture as it simmers and stir it every so often to make sure that it doesn’t burn or stick to the pan.
• Transfer to individual serving cups and chill for 1 and a half hours or more until it’s cold like pudding!
