Ingredients (Filling):
• 1.5 cups raw cashews (soaked)
• Juiced 1 large lemon
• 1 cup coconut milk (reduced fat)
• 1/3 cup maple syrup Ingredients (Crust):
• 1 cup pitted dates
• 1 cup raisin bran
Instructions:
• For the crust, add dates and raisin bran to a Vitamix blender or food processor and mix well. Add a tablespoon of water or oat milk to blend more easily. Transfer to bowl.
• For filling, add all ingredients to the Vitamix or food processor and mix well.
• You can either make these into muffin shapes or into a pie.
• Line the bottom of the muffins (around 1 tbs) with the crust ingredients.
• Add the filling ingredients to the top.
• Freeze for 4-6 hours until hard.
