From the Clear Skin Diet Program
Ingredients:
• 4 ripe/spotty bananas
• Date paste (8 pitted dates + 6 tablespoon water
• 1/4 cup water
• 1/4 cup oat milk
• 1/3 cup Wondercocoa powder (this is lower in fat)
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 and 1/4 cup oat flour (blended oats)
Instructions:
• Mash the bananas with a fork until smooth. Add in the water, oat milk, and cup of date paste. (To make date paste soak 10 dates in 6 tablespoons of warm water and blend on high in a blender until you get a paste like texture.) Whisk ingredients together.
• Add in the Wondercocoa powder, oat flour, baking soda, and salt. Mix the wet and dry ingredients together until batter is smooth.
• Line an 8 inch cake pan with parchment paper and bake cake for 25-30 minutes at 350 degrees fahrenheit.
• Let the cake cool and top it with some sugar free raspberry jam and cut up strawberries!
• (Note you can also use this recipe for chocolate cupcakes. Just use a silicon muffin baking tray instead and bake cupcakes for 20 minutes.)
