Ingredients

• 1 medium onion, diced
• 1 medium carrot, diced
• 3 garlic cloves, minced
• 1 cup cooked spaghetti pasta
• 1 can (14 oz) kidney beans, drained and rinsed
• can (14 oz) diced tomatoes
• 2 tsp Italian seasoning blend
• 3 cups vegetable broth
• 1 cups water
• 2 cups spinach
• Fresh parsley, chopped

Instructions

• Sautee onion and garlic until translucent. Add diced carrots and garlic. Be sure to add in water as they are cooking.
• Add the vegetable broth, water, and canned tomatoes to the pot. Simmer for 3-5 minutes.
• Add the pasta and canned beans to the pot. Let simmer for 10 minutes.
• Add spinach and fresh parsley. Serve!
