Ingredients

• 1 medium onion, diced
• 5 cups water
• 1 tbs garlic minced
• 3 tbs coconut aminos or soy sauce
• 1/2 tsp dried onion
• Brown rice noodle pasta
• 2 cups bok choy
• 1 cup chopped carrots
• 1/2 cup snap peas
• 1 cup shredded cabbage
• Handful chopped chives

Instructions

• Add all ingredients to the pot (except bok choy and noodles.) Simmer for 25-30 minutes.
• In a separate pot, cook up the noodles.
• Add bok choy and noodles to the soup and simmer for another 5-10 minutes. Serve!
