Ingredients

• 1/2 cup of chopped onion
• Fresh minced garlic
• 1/2 teaspoon of ground ginger
• 1 red pepper, chopped
• 1 tsp curry powder
• 1/2 tsp turmeric
• 1 baked sweet potato
• 1 cup of red lentils
• 3 cups of vegetable broth
• 1 tablespoon of curry paste
• 1 cup of washed chopped spinach
• 1 tablespoon of lime juice

Instructions:

• Saute onions, garlic, and spices in water until translucent.
• Add 1 cup of red lentils and 3 cups of vegetable broth to the onions and raise the heat to high. Bring the lentils to a boil. Once boiling, reduce the heat to low and cover with a lid, but don’t cover the pot fully with the lid. Leave about one inch opened so that steam can come out.
• Add baked sweet potato and mix.
• Add lime juice. Cook lentils for 3-5 more minutes.
(Note you can also use an instant pot for this recipe and it would be even faster. These lentils also go great with potatoes and basmati rice. Top your lentils on some baked Japanese sweet potatoes for the most delicious and filling meal!)
