Ingredients:

• 3 medium sized cooked potatoes
• 3 cups vegetable broth
• 1 tbs dijon mustard
• 1 onion chopped
• 2 cups broccoli
• 1 medium baked sweet potato

Instructions:

• Boil potatoes. Drain liquid.
• Sautee onion with water until translucent. Add vegetable broth and remaining ingredients.
• Simmer for 15 minutes.
• Add the soup to the blender to make creamy, (you may have to do this in batches depending on the size of your blender.)
