From the Clear Skin Diet Program
Ingredients
• 1 medium onion diced
• 1 medium red bell pepper, chopped
• 5 cups vegetable broth
• 1 tsp garlic powder
• 4 cups corn, fresh or frozen
• 4 medium potatoes, peeled and chopped
• 1/2 cup nutritional yeast
Instructions
• Saute the onion in water until it’s translucent (around 3-4 minutes.) Be sure to add in water as it cooks because water evaporates quicker than oil.
• Add in the chopped red pepper and more water. (Cook around 1 minute.)
• Add the remaining ingredients to the pot. Bring to a boil and let it simmer for 10 minutes. The potatoes should be tender and a fork should be able to puncture them.
• Take out 2 cups of the soup and blend it with a blender. Add back the blended soup and mix.
• Serve! This would be great paired with an open faced sandwich!
