Ingredients

• 1 can black beans (rinsed and drained)
• 1 can pinto beans (rinsed and drained)
• 1 can kidney beans (rinsed and drained)
• 2 cans 14 oz tomatoes
• 1/2 cup onion diced
• 1/2 cup vegetable broth
• 1 cup frozen corn
• 1 cup frozen peas (or any veggies)
• 1 Tbs Chili powder
• 1 tsp onion
• 1 tsp garlic

Instructions

• Saute onions in water until translucent. Make sure to add enough water as they cook.
• Add the canned tomatoes, vegetable broth, veggies and spices.
• Once frozen veggies are cooked all the way through, add the 3 cans of beans.
• Cook on low heat for 5 minutes.
• Serve with corn bread or over brown rice!
