Ingredients

• 1 medium onion diced
• 2 cloves garlic minced
• 1 cup carrots diced
• 1 cup corn
• 1 cup green beans
• 1 cup yellow squash
• 3 tbs salsa
• 5 cups vegetable broth
• 1 cup water
• 2 cup broccoli

Instructions

• Saute onion and garlic in water until translucent. Be sure to add water as it cooks.
• Add remaining ingredients and cook for another 5 minutes.
• Add in the canned tomatoes, broth, and seasonings. Let simmer for 6 minutes.
• Add in broccoli and let cook for another 5 minutes.
Ready to serve! This would be great paired with soft tacos!
