Ingredients:
• 1 medium onion, chopped
• 6 cups vegetable stock/broth
• 1.5 cups risotto (arborio) rice
• 1 tsp fresh minced garlic
• 2 cup cooked broccoli
Instructions:
• Saute onion with water until translucent.
• Add remaining ingredients (except broccoli) to pot and let is simmer for 25 mins.
• Once the rice has absorbed all of the water, add I the broccoli, and it’s ready!
