Ingredients:

• 3 cups dry split peas
• 2.5 cups water
• 1/2 cup Oil-free Vegetable Broth
• 1 cup shredded carrot
• 1 cup chopped onion
• 3 teaspoons garlic powder
• 1 teaspoon ground cumin
• 3 teaspoons lemon juice
• 1 cup baked potato, rice, or sweet potato.
• 1/2 cup fresh chopped parsley

Instructions:

• To the instant pot, add peas, water, vegetable broth, carrots, lemon juice and spices.
• Set your instant pot to cook for twenty minutes.
• Once finished, serve soup over rice or potatoes.
• Add 1/2 cup of fresh chopped parsley to the top.
(Note: you can make this same meal in a pot on the stove, but it will take around 45 minutes. Store in the fridge for a great meal prep and reheat in the microwave when you get hungry!)
