Ingredients:

• 1 pound of russet potatoes
• 3/4 cup of veggie broth
• 1/4 cup oat milk
• 1 tbsp nutritional yeast
• 1 tsp curry powder
• 1/2 Tbsp onion powder
• 1/2 Tbsp garlic powder

Instructions:

• Bring water to a boil, and make sure the pot is no more than half full.
• Wash potatoes and chop them in equally sized pieces as the water is heating up.
• Once the water is boiling, place the chopped potatoes into the pot and boil for 15-20 minutes.
• Reserve 1 cup of the potato water and then drain the potatoes.
• Mash the potatoes and add in the veggie broth as you mash them. If you need more liquid, add the potato water a few tablespoons at a time.
• Add the remaining ingredients and stir.
