Cook time: 20 minutes
Ingredients:
• 14 oz Thai Rice noodles
• 1/2 cup minced onion
• 1/2 cup reduced fat coconut milk
• Bean sprouts
• Shredded cabbbage
• Handful fresh mint
• Soy sauce or coconut aminos
• Sriracha (if you like spicy)
• Lime wedges
Instructions:
• Bring water to a boil and cook rice noodles. Drain water.
• In a separate pan, sauté onions in water. Add reduced fat coconut milk, fresh herbs, vegetables, and soy sauce. Cook until vegetables are soft.
• Pour sauce on top of noodles.
