Ingredients:

1 box of Thai rice noodles
Coconut aminos
Cilantro
1 cup chopped onion
Vegetable Broth
Ginger powder
Garlic powder
Coriander
4 red and green chopped peppers
3 tablespoons rice vinegar
Sriracha

Instructions:

Add a splash of vegetable broth and coconut aminos to a pot and saute’ onions in ginger powder, garlic powder, and coriander for 8 minutes on high heat. Add 4 cups of vegetable broth, chopped red and green peppers, 2 tablespoons of rice vinegar, and a squirt of Sriracha. Let soup come to a boil and add in Thai noodles and cook for another 5 minutes until noodles are soft.
(Note: great served with lime for more flavor.)
