from the Clear Skin Diet program 

Ingredients:

  • cooked/mashed sweet potato (see baked sweet potato recipe)
  • 1 and 1/4 cup of oat flour
  • 1/2 cup + 2 tablespoons of potato starch
  • 1 cup of oat milk
  • 1 1/2 teaspoons of vanilla extract
  • 2 tablespoons maple syrup
  • Potato Starch
  • 4 teaspoons of baking powder

Instructions:

  • Take the skin off the baked sweet potato and add it to a blender or food Add the oat milk, vanilla extract, and maple syrup and blend until smooth.
  • In a large bowl add the oat flour, potato starch, and baking powder and mix Add the wet ingredients to the dry ingredients and mix until smooth. Let the batter sit for 10 minutes.
  • Heat up a pancake griddle as the pancake batter sits. Cook each pancake for 3-4 minutes on lower heat. Flip and cook for another 1-2 minutes.
  • (Note: this recipe would be great served with sliced bananas, blueberries, strawberries, and a drizzle of maple syrup.)
