Total prep time: less than 5 minutes

Ingredients:

  • 2 whole wheat pieces of toast
  • Pinto beans
  • 1 tsp brown sugar
  • Condiments (ketchup, mustard, relish)
  • Spinach or sprouts
  • Salt and pepper

Instructions:

  • Toast Add pinto beans, condiments, spinach/sprouts, and salt and brown sugar.

ALTERNATE RECIPE:

Ingredients:

Sourdough bread
Pinto beans (canned or from instant pot)
Salsa
Lemon
Mustard
Sprouts

Instructions:

Toast 2 pieces of sourdough bread. Once bread is toasted add canned pinto beans or beans made from the instant pot. They are creamier and tastier when homemade. Top a bit of mustard, salsa, sprouts, and a squeeze of lemon. How very British!

(Note: this is a great lunch of dinner as well.)
