Total prep time: less than 5 minutes
Ingredients:
- 2 whole wheat pieces of toast
- Pinto beans
- 1 tsp brown sugar
- Condiments (ketchup, mustard, relish)
- Spinach or sprouts
- Salt and pepper
Instructions:
- Toast Add pinto beans, condiments, spinach/sprouts, and salt and brown sugar.

Sourdough bread
Pinto beans (canned or from instant pot)
Salsa
Lemon
Mustard
Sprouts
Instructions:
Toast 2 pieces of sourdough bread. Once bread is toasted add canned pinto beans or beans made from the instant pot. They are creamier and tastier when homemade. Top a bit of mustard, salsa, sprouts, and a squeeze of lemon. How very British!
(Note: this is a great lunch of dinner as well.)
