Ingredients:

1 cup vegetable broth
1/2 onion chopped
Garlic powder
Ginger powder
1/2 teaspoon cinnamon
1 tsp curry paste or powder
4 cups sweet potatoes peeled and finely diced
2 cups apple cider (not apple cider vinegar)
2 cups sweet apples (peeled and diced)
1/2 cup coconut water
1/2 cup oat milk

Instructions:

Add a splash of vegetable broth to a pot and saute’ onions in garlic powder, cinnamon, curry paste, and ginger powder on high heat until golden brown. Add more water and stir onions so they don’t stick to the pot. Add sweet potatoes, apples, cider and vegetable broth. Cover pot and simmer on low for 25 minutes until the sweet potatoes and apples are super soft. Using a blender add coconut water, oat milk and sweet potato mixture and blend until completely smooth.
