Ingredients:
2 medium carrots (peeled and chopped)
2 celery (chopped)
1/4 cup oat flour
Garlic powder
1 chopped onion
3 Yukon potatoes
2 cups vegetable broth
2 cups oat milk
2 tablespoons nutritional yeast
1 cup frozen corn
Instructions:
Add a splash of vegetable broth to a pot and saute’ onions, celery, and carrots in garlic powder on high heat until veggies are soft. Add a splash of water and stir veggies so they don’t stick to pot. Sprinkle oat flour over vegetables and stir. Continue to stir and cook until the flour starts to brown. Add in potatoes, vegetable broth, nutritional yeast and oat milk. Simmer until potatoes are soft which will take around 9 minutes. And in corn and stir until corn is cooked.
(Note: great served with brown rice to be more filling.)
