Ingredients

• 1 15 oz can black beans, rinsed and drained
• 1 cup cooked quinoa
• 1/2 cup onion, minced
• 1/2 cup chopped carrots
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1 tbs freshly squeezed lime juice

Instructions

• Saute onions in water. Add and cook the chopped carrots. Make sure to add enough water as they cook.
• Add in spices.
• Add cooked black beans and quinoa and stir.
• Serve on heated soft tacos. Squeeze fresh lime juice. Serve!
