From the Clear Skin Diet Program
Ingredients:
• Whole wheat wraps
• 1 large globe eggplant
• 1/2 cup brown rice
• 1/2 cup garbanzo beans
• 2 tbs homemade chickpea hummus (see recipe)
• Handful fresh lettuce
Instructions:
• Cut the eggplant into 1/2 inch thick sliced rounds.
• Prepare the grill to medium-high. Place slices on grill and cook each side for 3-4 minutes. The inside of the eggplant should be grayish and soft, (not white and hard.)
• On the wrap, add hummus and place eggplant slices on top. Add fresh lettuce, brown rice, and garbanzo beans to wrap.
• Serve! Note: Pair this with a veggie burger.
