From Clear Skin Diet Program
Ingredients:
Filling:
• 1 cup corn
• 1 can black beans (drained and rinsed)
• 1 cup brown rice
• 1/2 cup cilantro chopped
• 12 corn tortillas
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 cup “Cheezy Sauce” (optional)
Sauce:
• 2 8 oz cans of tomato sauce
• 1 tsp chili powder
• 1 tsp cumin
• 1 tsp garlic powder
• 1 tsp onion powder
• Freshly ground pepper
Instructions:
• Preheat oven to 350 degrees.
• For the filling, in a medium pan over medium heat, heat the vegetable broth. Add the onions and garlic and sauté until they are translucent. Add the corn and continue to sauté. Make sure to add in more water and broth as you cook. Add in the beans and set aside.
• For the sauce, in a high-speed blender, add the ingredients together and blend. Set aside.
• Using a casserole dish (size 10×8,) evenly distribute a thin layer of sauce to the bottom of the dish. Douse a tortilla in the sauce and place at the bottom right of the dish. Repeat this with another gorilla and place it at the bottom left of the dish.
• Add in a layer of the vegetable mixture filling as well as a handily of chipped cilantro. You can also add in some of the “cheezy sauce.” Repeat these layers until you have reached the top of the dish. Dump the remaining sauce on top and add any left-over filling. Add more “cheezy sauce.”
• Bake in the oven for 20-25 minutes. Let cool for 10 minutes.
