Ingredients
• 1/2 cup onion, minced
• 8 oz spaghetti
• 20 oz mushrooms, sliced
• 1 cup mashed potato
• 3 cloves crushed garlic
• 3/4 -1 cup vegetable broth
• 1/2 cup dry white wine
• 2 tbs nutritional yeast
• Handful of fresh parsley
• 1/2 cup cashews (optional)
Instructions
• Cook spaghetti according to package directions.
• Saute onion in water until translucent. Make sure to use enough water.
• Add the white wine, vinegar, and mushrooms to the pan. Let simmer for 5-10 minutes (until mushrooms are fully cooked.)
• Add sauce to a blender with yeast and potato. (and cashews if you want that part of the sauce.)
• Put sauce on top of spaghetti. Serve!
