Ingredients:

• 4 medium-large sweet potatoes
• 2 cups cooked lentils
• 1 can kidney beans
• Half juiced lime
• 1/4 teaspoon cumin
• 1 tsp garlic powder
• 1/4 teaspoon chili powder
• Handful of cilantro
• 1 cup cooked corn
• 1 cup cooked broccoli

Instructions:

• To bake sweet potatoes, preheat oven to 400 degrees Fahrenheit. Wash and dry potatoes. With a knife, poke 3 holes in the potatoes. Place on baking tray, put in the oven, and bake for 70 minutes. Let them cool.
• In a bowl, mix cooked lentils, add can of black beans, corn, broccoli, lime juice, spices, and herbs and mix together.
• Slice sweet potatoes down the center, and veggie bean mixture on top. Serve!
• Side note: Add barbecue sauce, avocado, or other condiments if you like it!
