I’ve been thinking about that question a lot lately. For years I’ve watched the plant-based movement drift away from the people who started it—Pritikin, Ornish, Esselstyn, McDougall—and the question they built their careers on: what actually reverses disease? These days we mostly argue about olive oil, protein, and supplements instead.
