Ingredients
- 2 cups baked sweet potato
- 1/2 cup pomegranate seeds
- 4 cups of spring mix
- 1 chopped pepper
- 1/2 cucumber sliced
Instructions
- Wash and dry sweet Stab sweet potatoes with knife. Place on baking tray, and bake for 70 minutes at 405 degree F.
- Assemble all ingredients together and mix in a salad bowl.
- Note: Already have the sweet potatoes pre-cooked if you want a cold salad.
