Ingredients

  • 2 cups baked sweet potato
  • 1/2 cup pomegranate seeds
  • 4 cups of spring mix
  • 1 chopped pepper
  • 1/2 cucumber sliced

Instructions

  • Wash and dry sweet Stab sweet potatoes with knife. Place on baking tray, and bake for 70 minutes at 405 degree F.
  • Assemble all ingredients together and mix in a salad bowl.
  • Note: Already have the sweet potatoes pre-cooked if you want a cold salad.
