Ingredients

• 1/2 cup onion minced
• 1 can chickpeas (rinsed and drained)
• 1 tsp curry powder
• 1/2 tsp turmeric
• 1 8 oz can tomato paste
• 1/2 cup coconut milk reduced fat
• 2 cups spinach

Instructions

• Saute onions in water. Make sure to add enough water as they cook.
• On medium heat, add the tomato paste, coconut milk, spices, and spinach.
• Once spinach is cooked, add in chickpeas.
• Serve over brown rice or in a pita!
