I'm thinking that the amount of oil given
in the recipe may be causing the sogginess.

I tried it using an oil spray (no-stick spray),
giving the mushrooms just a light coating,
and they came out pretty crispy!

Try that, and if they start to get too
dark before they are crispy,
lower the heat a little, and keep roasting
until they are crispy, bearing in mind that
roasted foods can continue to crisp after they
are removed from the oven.

Sometimes it is hard to duplicate the processes
used by big factories, because they have so many
specialized contraptions. They might even
finish the mushrooms in a giant dehydrator!
