Wow -- Six eggs!!!!!! That's a lot to replace...

If you're willing to experiment, I have a few ideas.


Use your egg replacer for 4 eggs,
PLUS two chia (or flax) eggs' worth.

Also, bake them in a MUFFIN PAN or muffin cups,
rather than in a cake pan.

Check for doneness after 30 minutes, and every
five minutes after that.

Let me know how it goes!

Chia Egg Substitute

1 Tbs chia meal (freshly-ground chia seeds)
3 Tbs water

In a small bowl, whisk together chia meal and water.
Beat until mixture has the consistency of raw egg.
Chill in fridge 15 minutes.

Equals 1 egg for baking and binding.

Flax Meal Egg Substitute

1 Tbs flax meal (freshly-ground flax seeds)
3 Tbs water

In a small bowl, whisk together flax meal and water.
Beat until mixture has the consistency of raw egg.
Chill in fridge 15 minutes.

Equals 1 egg for baking and binding.
