I understand the desire to make your own
foods, but buying ready-made vegan dairy
substitutes is not a terrible thing to do,
and eventually you could make your own
most of the time.

After all, most people who use dairy products
buy them ready to eat, and only some people
make their own cheeses, butter, etc.

If you can find Better Than Cream Cheese,
it can be transformed into a delicious
cottage cheese analog. Just mash it
slightly, then mix in a bit of nondairy
milk. Don't mix it too well -- you want
those soft chunks in it so it resembles
the texture of cottage cheese.

To do it from semi-scratch, mash 1 box
of soft silken tofu, and moisten with
nondairy milk, as above. Add a dash
of salt, and a bit of herbs, if desired.

A very good nondairy "cream" for coffee
is coconut milk or coconut cream.
Look for these in cans, or buy coconut
milk powder, and mix it with water or
nondairy milk, as thick or thin as you like.
