I love coconut oil. I use it in place of most
other oils. Just that one substitution seems
to make a big improvement. Don't worry about
"low fat", just try to use "good fat".
Avoid hydrogenated fats as much as possible.

Butter your toast with mashed avocado or
coconut butter.

Don't give up starchy foods entirely, but
mix them with non-starchy foods to lower the
carb content of the dish.

Make mashed potatoes lower carb by mixing
half potato and half cauliflower (cook together).
If you want to get hardcore low carb, use
all cauliflower for the mashed "potatoes".

Small potatoes have less starch than large potatoes.

Mix corn with green beans to get a lower carb dish.
You'll still get the corn flavor, but much less starch.

If you don't already have one, get a book of
carb counts for foods.

You'll find that many foods you already love
are lower in carbs than others, and by
choosing the lower carb ones more often,
you can make great meals, with no feeling of
deprivation.
