Lefsa

6 cups mashed potatoes (fresh or from potato flakes)
1 tsp salt
1 Tbs sugar
3 Tbs margarine
2 Tbs soy creamer or thick soymilk
1 & 1/2 cups flour

Mix all ingredients, except flour.
Refrigerate overnight.
Next day, add flour, and mix well.
Heat griddle or frying pan to 400 F.
Divide dough into 12 pieces, and roll into balls.
Flatten balls out very thin on a floured board.
Bake on griddle until brown spots show.
Turn over, and bake on other side until brown spots appear.

Lefsa stores very well in plastic bags in refrigerator for 2 - 3 days.
Can also be frozen for up to 6 months.
Eat spread with margarine, and sprinkled with cinnamon and sugar.
