Subject:         Coconut Cream Pie

I was wondering how I can veganize this recipe. The milk is
easy, I'm not sure what to do for the 3 beaten egg yolks.

Coconut Cream Pie Filling (Microwave)

In Large microwavable bowl, mix:
½ c sugar
2 tbsp flour
2 tbsp cornstarch
¼ tsp salt
Blend in 2 1/2 c milk

Microwave on high 7 -8 min, stirring every 2 min.

Whisk small amount of hot milk mixture into 3 beaten egg
yolks. Whisk back into hot mixture-stir constantly.

Microwave on high 1 min. Stir in:
2 tbsp butter
1 tsp vanilla
1 c coconut

Fill cooked pie shell & refrigerate 3 hrs before serving.
Top with whipped cream.
