Baked "Ham" with Pineapple

Vegetarian ham
Canned pineapple rings
Pitted cherries or seedless red grapes
1 jar pineapple preserves
Brown sugar
Margarine, melted
Pan spray

Spray a baking pan with pan spray.
If not already sliced, cut vegetarian ham into 1/2" slices.
If using pre-sliced ham, stack slices 1/2" high.
Arrange slices in one layer on the baking pan.
Top each slice with one or two more slices.
Put a pineapple ring on top of each of the stacked slices.
Spoon some pineapple preserves in the center of each ring, filling the space.
Sprinkle brown sugar and cinnamon on top of pineapple and preserves.
Drizzle with melted margarine.
Cover pan with foil.
Bake in preheated 350 F oven, until heated through. Do not overcook.
Just before serving, put a cherry or grape in the center of the
pineapple ring, amidst the preserves.

Vegetarian "ham" can be found in Asian supermarkets, usually frozen.
You can also use pre-sliced "ham", such as Yves or LightLife.
