Pumpkin Chocolate Chip Cookies -- YES! October 23, 2013 at 9:42 pm PST
1 cup shortening
1 can solid pumpkin puree
2 tsp vanilla extract
4 cups all-purpose flour
2 tsp baking soda
2 tsp ground cinnamon
12 oz semisweet chocolate chips
Cream the sugar, shortening, pumpkin, and vanilla together.
Mix until light and well combined.
Mix the flour, baking soda, and ground cinnamon.
Stir the flour mixture into the creamed mixture. Mix until combined.
Stir in the chocolate chips.
Drop by teaspoons onto a baking sheet.
Bake at 350 F for 12 - 15 minutes, or until set.
Let cookies cool on a rack.
NOTE:
You can substitute applesauce or prune puree for half the shortening.
