Subject:         Apples, muffins, biscuits questions

I've been motivated to bake, and I've come up with some questions:

- What kind of apples do you like for baking, when making cakes, muffins, biscuits, things like that? Must you peel them?

- What can you do to make them healthier, e.g. things like subbing flours, etc.? And when doing this, what are the ratios?

- I tried biscuits for the first time...ugh. Dough was sticky, and using a glass to 'cut' them out was a bit of joke. (It turned out easier to just clump the dough on the cookie sheet; they turned out fine!). Any tricks to making this easier?
