Subject:         My healthy fruit cake recipe

Here is a recipe for fruit cake that I have been making for a number of years: No eggs, no sugar, no shortening/butter, but it tastes great!

Fruit Cake
3 cups chopped dry fruits
2 cups orange juice
2 cups whole wheat flour
2 teaspoons baking powder
dash of cardamom or cinnamon

Pour orange juice in a deep container and add fruits. Leave covered in the fridge overnight.

Mix flour, baking powder and cardamom/cinnamon. Add to fruit mixture.

Pour into greased loaf pan and bake at 300F for about 55-60 minutes. (makes 4 mini loaves)

Cool on racks. Enjoy
