There are some good pancake mixes available, --- Pancake Mix 4 cups flour (try a mixture of all-purpose & whole wheat) Mix all in container with tight-fitting lid. --- To use: In a bowl, put a portion of mix. Heat griddle or pan until a few drops of water "dance" on it. Self-Rising Flour 4 cups flour (white, whole wheat, or a mixture) Mix all ingredients well. but if you want to make your own, try this:
2 cups powdered milk (soy, rice, coconut, etc)
2 Tbs baking powder
2 Tbs natural sugar
1/2 tsp cinnamon
1 & 1/2 tsp salt
1/4 cup Ener-G Egg Replacer, dry (optional)
Stir in 'milk or water, until you get a medium-thick batter.
Do not overbeat mixture, or pancakes will be tough.
(If they sizzle, it is too hot. If they sit, it is not hot enough.)
Cook pancakes until golden, turning once.
Serve with margarine, syrup, fruit, or however you like.
