GrainBean Loaf

1 onion, peeled and shredded
1/2 cup shredded carrot
1/4 cup veg broth
2 cups cooked beans or lentils (measured after cooking)
1 cup cooked brown rice (measured after cooking)
1 Tbs soy sauce
1/4 tsp black pepper
1/4 tsp thyme
Pinch of oregano
Pinch of basil
Pinch of rosemary
1 cup wheat-free cornbread crumbs (or rolled oat flakes)
2 Tbs cornstarch mixed with 1/4 cup water

"Fry" onion and carrot in broth until soft.
Put beans and rice into a large bowl, and mash to a chunky paste.
Add onion-carrot mixture and remaining ingredients, and mix well.
Pack mixture into a sprayed, non-stick loaf pan.
Cover with foil.
Bake at 350 F for 30 minutes, or until hot throughout.
