3 cups flour (white or half white and half whole wheat)
1 tsp salt
1/2 cup vegetable shortening
1/2 cup cold water (approximately)
Cooking oil

In a large bowl, mix flour and salt.
Cut in shortening until mixture resembles cornmeal.
Add cold water gradually, stirring with a fork, until all flour is thoroughly
Knead dough on a lightly floured surface about 10 minutes, or until smooth.
Cover dough with a damp cloth.
Let stand at room temperature for 15 to 30 minutes (this makes the dough easier
to roll out).
Cut dough into 12 equal pieces.
With a rolling pin, roll out each piece on a lightly floured board until as thin
as possible.
Lightly oil a large, heavy frying pan or griddle.
Place this over low heat.
Cook tortillas in the hot pan for a few minutes, pressing down with a spatula,
turning occasionally, until both sides are
covered with bubbles, but the tortillas are still fairly soft.
Do not allow them to brown.

If tortillas are not to be used immediately, wrap them individually, and
refrigerate or freeze.

The partly-cooked tortillas can be browned and served as bread (see below), or
used in recipes in many ways
they should be cooked further before serving).

Makes 12 tortillas.

To serve:

Heat tortillas over low heat in oiled pan, on top of stove or in oven, until
crispy and lightly browned.



2 cups semolina flour or durum flour
1/2 cup whole wheat flour
1/2 tsp salt
3/4 cup water (approximately)

Mix flours and salt.
Add water to make dough.
Knead until smooth.
Let rest 10 minutes.
Roll out dough very thin, and cut into noodles, or shape as desired.
Let dry, or use immediately.

To Use:

Cook in boiling, salted water or broth until tender.
Serve with sauce of your choice.


Noodles II

1/2 cup semolina flour or durum flour
1/4 cup whole wheat flour
1/4 tsp salt
2 tsps oil
1/2 cup water (approximately)

Mix flour and salt.
Work in oil.
Add water to make dough.
Knead until smooth.
Cover, and let rest 10 minutes.
Roll out as thin as possible, and cut into squares, circles, or noodles.
Or, put through pasta machine (dust roller with flour).
Cook in boiling, salted water for 10 - 20 minutes, or until tender.
