Very fresh ricotta tastes
a lot like fresh paneer.
Drain and dry it well,
and it should be a good
substitute in recipes where
the paneer is used crumbled.

For recipes where the paneer is
to be used cubed, a very good
substitute is Mexican queso fresco
(fresh cheese).

Use the two cans of chick peas
in place of the dried ones.
Obviously you won't have to
cook them. Just add near the
end, and heat through.

In place of the garlic,
use 1/4 tsp - 1/2 tsp
asafetida (hing).

Everything else can remain the same.
