Would not suggest red beans and rice to come down from extended fasting or low calorie intake. Use big lettuce salads with tomato, little olive oil and seasoned rice vinegar and a little cooked light veges like broccoli, squash and carrots. Beans and rice could kill a person coming off extended fasting and low food intake due to high mucus forming qualities of beans and tofu. Some saints are given a gift to live without eating but is not for everyone, and is very very rare. A fruit juice diet or juice fast needs to be slowly transitioned to. Our natural diet is raw fruit and fruit juices, non fatty fruit. This is what John the essene lived on in the desert and it is known the Buddha Sakamuni lived in mango groves and ate their fruit. But we need a vegetable and fruit transition diet. Please see the book The Buddhist Essene Gospel of Jesus which has a transition to fruit diet appendix.
