Herbert Shelton wrote, "Ragnar Berg, a Swedish chemist, associated himself with Lahmann and began the development of the world's greatest food scientist. Lahmann died, but Berg still carries on. Lahmann's sanitarium fell into the hands of others. Lahmann's work was declared obsolete, the institution was given over to "experiments a la Steinach" and Berg was discharged.

It should be borne in mind that "with the exception of certain investigations made by Ragnar Berg, absolutely no research of any kind has been undertaken on the complete metabolism of the mineral salts, either in man or animal." --The Physiology of Nutrition, London, 1927." -Herbert Shelton Vol. II p. 14

Dr. Paavo Airola wrote, "Here is what Dr. Ragnar Berg, perhaps the world's greatest authority on nutrition and biochemistry, said about the superiority of juice fasting to water fasting:

'During fasting the body burns up and excretes huge amounts of accumulated wastes. We can help this cleansing process by drinking alkaline juices instead of water while fasting. I have supervised many fasts and made extensive tests of fasting patients, and I am convinced that drinking alkaline-forming fruit and vegetable juices, instead of water, during fasting will increase the healing effect of fasting. Elimination of uric acid and other inorganic acids will be accelerated. And sugars in juices will strengthen the heart...Juice fasting is, therefore, the best form of fasting.' "

So Shelton acknowledges that Ragnar Berg was one of the worlds greatest food scientists and Airola quotes Berg, "Juice fasting is, therefore, the best form of fasting."

Now let's look at what Herbert Shelton writes about fruit and vegetable juices:

"It was found by certain British and German investigators that the addition of fresh carrot juice or raw spinach juice to the diet of children suffering with severe scurvy results in recovery. The addition of fresh vegetable juices to the diet has given excellent results in many cases of malnutrition. The same is true of fruit juices. It is amusing to see the "discovery" of their value trumpeted to the world as a "brilliant medical discovery," thirty years after it was rejected by the medical profession as nonsense of the faddists and quacks. We faddists and quacks were not dismayed by their taunts and are now triumphantly right.

Changes in the urine prove positively that metabolism is improved by the liberal use of fruits and green vegetables or their juices. The urine finds particularly indicate a more complete protein transformation and oxidation. The improvement in adults is not so quickly gained as in the young, but is finally by just as positive.

These juices are valuable not alone in malnutritional states in children, but also in chronic diseases in children and adults. Their excesses of bases supply needed basic salts to the body and enable it to sweep itself free of acids. But the juice of no food is as valuable as the food itself." -Herbert Shelton Vol. II p. 406-407

Shelton readily admits that fruit and vegetable juices are beneficial, and that whole foods are more beneficial than their juices, but why couldn't Shelton recognize the benefits of Juice Fasting for those whose digestive systems were so impaired that they could not assimilate what they ate? As Shelton said himself, "What good does it do a man to take food, even the finest food, if he is unable to digest and assimilate it?"
