If you already have enough knowledge to SUSPECT that it would be good to do without salt, then this is sufficient to move forward with a limited personal experiment. Pick a time frame -- two weeks? -- and resolve to do without salt for that entire period. Not because it is the "right" thing to do, but because you're curious, and you have committed to the experiment, and the experiment will only be useful if you follow it strictly. Nothing to lose except two weeks without salt. You can do whatever you like when the two weeks are up.

Observe how you feel. How food tastes. The firsthand experience you gain will be richer and deeper than anything that anyone here can tell you. Then, whether you decide to go back to salt regularly, occasionally, or never, you will in any case know precisely what you're gaining and what you're losing.
