I agree with you K, yet I should mention Lou's way of eating fat on raw vegan.

Lou Corona teaches an interesting way to consume fat: sprout the seeds first and then turn them into yogurt to turn the fat into fatty acids, and additionally use digestive enzymes. This is a way of getting enough calories on a strict raw vegan diet.
Lou doesn't ever eat raw nuts. He says it's just like eating cooked food, because they are so hard to digest.

Sometimes I blend up sprouted seeds with fresh ripe raw california orange juice and they are so easy to digest that way. not heavy at all, not a digestive slow-down.

Anyway, Lou's way is just pretty much how Ann Wigmore taught to add rejuvelac to make nut and seed cheese.

I like how Esselstyn distinguishes the degrees of fat. He says avoid the nuts (for those with heart disease) and consume some seeds, like poppy and sesame. He says chestnuts are the exception because they are higher carb.

I just want to say that I am a person that fares poorly on raw nuts (just as Lou corona and Esselstyn teach) and so naturally I prefer a lower fat diet. However, sprouted seeds, made into yogurt, a salad dressing or a seed milk is so easy to digest and for me, one of the essential parts of my diet.
