Lou Corona blends his nuts with water in the vitamix with some probiotic powder and puts them in a mason jar and lets sit on a counter for 4 hours and then refrigerates. This way the yogurt is not too strong and it will continue to ferment in the fridge overnight.
I can't imagine fermenting nut yogurt for 2 days outside the refrigerator. But it's nice to know that this is possible because my one beef with Lou's way is that it is refrigerator dependent and I couldn't figure out how this is sustainable without electricity.
My next question is how do you make your rejuvelac? Sorry for asking if it's already on your website. yes I read that rye has more phytase so it helps breaks down more phytates. Do these leach into rye rejuvelac?
