Calcium quantities can largely vary in sesame (with
hulls on). Some analysis at DOA show up to 1,150 mg
per 100 grams while others show 450 mg per 100 grams.
But even more interesting is that sesame only fills
1% rda for vitamin E, but when you sprout it you fill
250% of the rda for 100 g because the vitamin E
levels increase by about 25,000%.

Sesame is also a B vitamin powerhouse if sprouted,
and if fermented even more B vitamins increase by
significant amounts.

Needless to say, l am a very big fan of sprouted
sesame for many many reasons to vast to give here. It
is also the only known plant source of the `so
called' vitamin T.
